Yesterday our children and staff ate a vegetable slice for lunch. This recipe is a good way to introduce vegetables to the children, they really love the slice.

VEGETABLE SLICE FOR CHILDREN RECIPE (4 serving)
- 2 tablespoons olive oil
- 2 zucchini
- 1 brown Onion
- 1 cup shredded cheese
- 1 cup frozen peas
- 1 cup self raising flour
- 5 eggs
- Preheat oven to 170°C for 15 minutes. Grease tin.
- Mix the zucchini, onion, frozen peas, flour and cheese in a large bowl.
- Add the olive oil and the beaten eggs, and mix. Season with pepper. Pour into tin.
- Bake for 40 minutes until golden.
